Special Lemon Poppy Seed Cookies

I recently made some cannabutter and wanted to make some treats with it. But to be honest the taste of it makes me sick. Made too strong of a batch once and lets just say I can’t even eat regular brownies now. So to combat that I wanted to do a recipe that can help cover the flavor a bit. So if you like edibles but aren’t a big fan of the flavor this recipe is for you. You can also make these with out just substitute it with regular butter. I went with lemon because I knew it would be a strong enough flavor to help mask it.

Special Lemon Poppy Seed Cookies:                                            Yields: 20-22

  • 560 g AP Flour
  • 3/4 tsp Baking Powder
  • 1/2 tsp Salt
  • 200 g Cannabutter (Or Unsalted)
  • 315 g Sugar
  • 2 Eggs
  • 1 Yolk
  • 1 tsp Vanilla
  • 1 Lemon Zested
  • 150 g Buttermilk
  • 1 1/2 tsp Poppy Seeds

Cream butter, sugar, and zest until pale (2 min) Scrape well. Add eggs, yolk, vanilla in 2 parts, scrape again. Add half the dry ingredients, then buttermilk until almost combined. Scrape well, add remaining dry until just combined.

 

Scoop and chill at least 3 hours before baking. Slightly flatten and bake at 325º until firm but springy to the touch. About 10-14 minutes.

 

Lemon Glaze:

  • 2 Tbsp Fresh squeezed Lemon Juice
  • 1 C Powdered Sugar

In a bowl whisk together powdered sugar and lemon juice until thick. If too runny add more powdered sugar. When cooled completely, glaze top of cookies and let dry. I would start with half a cookie and see how potent they are for you. Enjoy and be safe! If you have any questions feel free to ask!
